Absolutely delicious way to prepare Mahi for the table. Served with Risotto Milanese and Pineapple Glaze.
Ingredients
- 1 cup Risotto
- 1/2 cup Parmesean Cheese
- 1/4 cup heavy cream
- 1/4 cup white wine
- pinch each of salt/pepper/basil
- 1 pinch of sliced shallots
- 1 pinch of sliced leeks
- 1 pinch of diced tomatoes
- 1/4 cup scallions
- 3 cups pineapple juice
- 1 tsp Black sesame seeds
- 1 tsp White sesame seeds
- 1 tbsp Sesame oil
- 1 cup soy sauce
Mahi Mahi fillets, cut into individual servings.
Risotto:
Pineapple Glaze
Preparation
- Pan sear the Mahi and finish in oven at 360 degrees for about 6 minutes, depending on thickness.
- Pineapple glaze: Add pineapple juice, soy sauce, scallions, sesame oil, and seeds in a sauce pan and reduce to 1/4 volume.
- Prepare Risotto: Saute garlic, shallots, leeks, and tomatoes. Deglaze pan with white wine, add risotto and heavy cream, and finish with Parmesean cheese.
- Serve Mahi on a bed of Risotto, adding glaze to top of Mahi when ready to serve.
