Sesame Seared Mahi Mahi

Absolutely delicious way to prepare Mahi for the table. Served with Risotto Milanese and Pineapple Glaze.

Ingredients

    Mahi Mahi fillets, cut into individual servings.

    Risotto:

  • 1 cup Risotto
  • 1/2 cup Parmesean Cheese
  • 1/4 cup heavy cream
  • 1/4 cup white wine
  • pinch each of salt/pepper/basil
  • 1 pinch of sliced shallots
  • 1 pinch of sliced leeks
  • 1 pinch of diced tomatoes
  • Pineapple Glaze

  • 1/4 cup scallions
  • 3 cups pineapple juice
  • 1 tsp Black sesame seeds
  • 1 tsp White sesame seeds
  • 1 tbsp Sesame oil
  • 1 cup soy sauce

Preparation

  1. Pan sear the Mahi and finish in oven at 360 degrees for about 6 minutes, depending on thickness.
  2. Pineapple glaze: Add pineapple juice, soy sauce, scallions, sesame oil, and seeds in a sauce pan and reduce to 1/4 volume.
  3. Prepare Risotto: Saute garlic, shallots, leeks, and tomatoes. Deglaze pan with white wine, add risotto and heavy cream, and finish with Parmesean cheese.
  4. Serve Mahi on a bed of Risotto, adding glaze to top of Mahi when ready to serve.
