INGREDIENTS:
- 20-30 Medium Size Clams (Shucked and Chopped if Necessary)
- 3-4 Cloves Garlic (chop coarsely)
- 1/2 stick butter
- 2 tablespoons olive oil
- 1 Teaspoon Salt
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon black pepper
- 1/4 cup parsley (chop coarsely)
Preparation:
- Shuck all of the clams into a pasta strainer over a bowl so you can reserve the clam juice for cooking. When finished filter clam juice with fine strainer if sandy or use regular strainer and place a papertowl in the bottom straining into clean bowl.
- Add oil to a large saucepan and place over a medium heat.
- Add garlic and cook for a few minutes making sure not to burn.
- Add all of the clam juice and butter and simmer for 20 minutes.
- Cook pasta according to directions on the package.
- If the clams are large cut/ chop into bite size pieces.
- Once the pasta is finished turn the heat up to med. High on the clam sauce and add the clams and parsley bringing the sauce to a brief boil.
- Finally, when the clam sauce has boiled briefly shut off heat and add the seasonings (Salt, red pepper flakes, pepper).
Serve over pasta a dash of parmesan cheese is recommended.
