Pheasant With Hot Cherry Pepper & Bacon Skewers

An interesting appetizer using Pheasant and Honey…

Ingredients

  • 1 pheasant breast cleaned and cut into one inch squares (6 to 8 pieces)
  • 3 or 4 hot (or sweet) stuffed cherry peppers, quartered
  • ½ cup seasoned bread crumbs
  • 3 or four strips of bacon, cut in half
  • 6 or 8 wood or bamboo skewers
  • ½ cup good quality bee’s honey
  • 2 tsp chili powder

Preparation

  1. In a mixing bowl combine the pheasant pieces with the seasoned bread crumbs till well coated.
  2. Lay out halved strips of bacon. On one edge of bacon place one piece of pheasant with one quarter of cherry pepper so that the stuffing is touching the pheasant.
  3. Roll up the bacon strip and skewer the roll through the middle trying to pierce both the pheasant and the pepper.
  4. Drop into hot oil (350 degree) and cook till bacon is crispy and pheasant is cooked.
  5. Mix chili powder and honey together till well blended and pour over cooked pheasant skewers.
