Delicious recipe for those pesky Bluefish: You will think twice about letting them go!!
Ingredients
- 2 lbs. bluefish or any white fish fillet
- extra virgin olive oil
- 4-5 garlic cloves, minced
- 1/4 cup parsley, chopped
- 15 calamata olives, pitted and chopped
- 3 potatoes, sliced thin (approx. 1/4 inch thick)
- 2 ripe tomatoes: squeeze to remove water and seeds then chop
- black pepper to taste
- sea salt to taste
Preparation
- Oil the bottom of a glass baking dish and line with potatoes, overlapping slightly like shingles, and drizzle a little oil over potatoes.
- Broil potatoes for approx. 3 to 5 minutes, test with fork to make sure fork goes through potatoes (potatoes should not be too hard to pierce or too soft).
- Take potatoes out of oven and start by sprinkling half of each of the following ingredients on potatoes Salt, black pepper, parsley, garlic, olives and tomatoes.
- Place pieces of fish on top of the potatoes and place the remainder of each ingredient directly on fish.
- Place fish in oven at 350 degrees and bake for approx. 20 to 25 minutes, depending on the thickness of fish. Remove when fish is cooked through and flaky.

Tried the recipe this week with the last of the frozen Bluefish. It was delicious - even the kids enjoyed it. Now I have to wait until June to try it again with fresh Bluefish this time. Great recipe. Thanks!
