Pan seared Mahi Mahi on Sweet Potato Polenta with a Pineapple-Mango Salsa

Absolutely delicious way to prepare Mahi for the table. Served with Pineapple-Mango Salsa and a Sweet Potato Polenti Cake and Baby Greens….

Ingredients

    Mahi Mahi fillets, cut into individual servings.

    Pineapple-Mango Salsa:

  • 1 Diced Pineapple
  • 1 Diced Mango
  • 1 Cup Diced Tomato
  • 1 Cup Diced Roasted Red Pepper
  • 1 Tbsp Cilantro
  • Sweet Potato Polenta

  • 3 Sweet Potatos
  • 4 Cups Cornmeal
  • Salt and Pepper to Taste
  • 10 Cups Water

Baby Greens

  • 1 cup Arugala
  • 1 cup Baby Spinach
  • 1 Tbsp Extra Virgin Olive Oil
  • Preparation

    1. Pan sear the Mahi and finish in oven at 360 degrees for about 6 minutes, depending on thickness.
    2. Pineapple-Mango Salsa: Simply dice and combine all ingredients!
    3. Polenta: Boil sweet potatoes until soft and mash. Add sweet potato mash to 10 cups of water and bring to a boil.
    4. Slowly stir in 4 cups of corn meal and add salt and pepper.
    5. Pour into a square baking pan and allow to cool.
    6. Cut with circle mold and bake in 400 degree oven for 5 minutes.
    7. Place Polenta on plate, layer baby greens and Mahi on top, and serve smothered with Salsa.
