Absolutely delicious way to prepare Mahi for the table. Served with Pineapple-Mango Salsa and a Sweet Potato Polenti Cake and Baby Greens….
Ingredients
- 1 Diced Pineapple
- 1 Diced Mango
- 1 Cup Diced Tomato
- 1 Cup Diced Roasted Red Pepper
- 1 Tbsp Cilantro
- 3 Sweet Potatos
- 4 Cups Cornmeal
- Salt and Pepper to Taste
- 10 Cups Water
Mahi Mahi fillets, cut into individual servings.
Pineapple-Mango Salsa:
Sweet Potato Polenta
Baby Greens
Preparation
- Pan sear the Mahi and finish in oven at 360 degrees for about 6 minutes, depending on thickness.
- Pineapple-Mango Salsa: Simply dice and combine all ingredients!
- Polenta: Boil sweet potatoes until soft and mash. Add sweet potato mash to 10 cups of water and bring to a boil.
- Slowly stir in 4 cups of corn meal and add salt and pepper.
- Pour into a square baking pan and allow to cool.
- Cut with circle mold and bake in 400 degree oven for 5 minutes.
- Place Polenta on plate, layer baby greens and Mahi on top, and serve smothered with Salsa.

Thanks for the recipe. I saw your show yesterday while dining at Applebees. I noticed you just started broadcasting with NESN…nice that I got to see your first broadcast. The recipe looks great, can’t wait to try it.
